Vegetarian Stuffed Bell Peppers

Vegetarian stuffed bell peppers…..

4 large green bell peppers tops cut off and seeded
2 cups white rice cooked
2 1/2 cups shredded jack cheese
1 cup sour cream
1 small can tomato soup
1 small can diced tomatoes with garlic
salt and pepper to taste

Prepare bell peppers by cutting tops off and seeding
Mix rice sour cream and cheese together salt and pepper to taste
(save some cheese to sprinkle on top while peppers are baking)
Stuff peppers with the rice and cheese mixture to top and place in a backing dish making sure to keep them upright while baking
Mix tomato soup and diced tomatoes together and pour over peppers cover with foil and bake at 375 for 30 minutes uncover and sprinkle remainder of cheese on top and continue cooking for another 10 minutes…. Let stand 10 minutes before serving.
