Spicy Sausage Pasta
Quick 1 Pot Dinner – Spicy Sausage Pasta – fully adaptable!
1 tbsp olive oil
1 lb sausage or Portabello Mushroom or Chicken or Shrimp or Beef (entirely your choice)
1 cup diced onion
2 cloves garlic, minced
2 cups chicken broth or Vegetable Broth if you are going vegetarian.
5 ripe tomatoes a couple of and green chiles, Mild
1/2 cup cream
8 oz penne pasta or wide Egg Noodles
1/2 teaspoon salt and pepper, each
1 cheese, shredded
1/3 cup thinly sliced scallions
Do not cook pasta first, it will cook in the sauce on the stove.
Add olive oil to an skillet over medium high heat until just smoking. Add sausage (or meat of your choice) and onions and cook until lightly browned, about 4 minutes. Add garlic and cook until fragrant, about 30 seconds.
Next add the broth, tomatoes, cream, pasta, salt and pepper and stir. Bring to a boil, cover skillet, and reduce heat to medium-low. Simmer until pasta is tender, about 15 minutes.
